I am relatively new to the game, and did get a level 80 boost ticket. With that ticket, I got a brand new level 80 character wearing celestial exotic armor. The guild I joined explained that this gear allowed me the opportunity to play my profession however I wanted, while working towards replacing armor and weapons to find a niche.
Depends on how you like to play. Make a Ranger and a Revenant if those are the weight classes you like to play. I generally prefer melee classes (or healers in group content), the reason being that 90% of mobs will rush you when in combat, and I just get annoyed at always trying to keep them at bay with ranged classes.

Swap to sword for more melee friendly fights. Gear is mostly Valkyrie with a few Assassin pieces to get your crit to 30% (with food). This is enough to give you 100% crit with Fury and Retaliation up (with Radiance tree it gives 50% crit, 10% damage boost and 250 ferocity. It also passively stacks might up to about 8.)
